The Chef.

The adventure began at the Bistrot de la Marine with the living legend of French cuisine Jacques Maximin, then with Chef Éric Frechon and at the Balzac with Pierre Gagnaire "second in command" for the last 8 years before opening "his house" in the 8th arrondissement to a clientele of connoisseurs looking for unique moments of gastronomy.

THE MENU

La Maison Dubois.

Exceptional dishes, fresh produce, bread made on the premises, all the products are worked on here. It's a refined cuisine that harmoniously blends classicism with a quest for flavours that leave plenty of room for the product itself.

Short circuits, fruit and vegetables from sustainable agriculture, "We want a cuisine where you can really taste the produce, through different proposals. I really wanted to offer a generous menu to go with 2 menus".

The team.

“We’ve been working with the team for several months. It’s young, talented, close-knit and committed to the project. Everyone brings their own personality to the dishes and desserts”.

We are offering 6 tables including a lounge so that we can do a quality job while preserving the spirit of a Maison. “We wanted it to be a peaceful place, where customers can take their time if they wish”.

The living room.

With room for up to six people, the Salon “Jacques Maximin” is the ideal place for a tasting session in complete confidentiality.
